Chocolate with Pop Rocks

Awhile back I posted about the AWESOME chocolate with Pop Rocks from Kollar Chocolates (total food porn pictures). And I vowed to make my own. I finally did. I bought some peppermint Pop Rocks (sold in December) and some Ghirardelli chocolate (chocolate bark with peppermint). I know that's overkill, but the chocolate was on sale in January.


Start by breaking up the chocolate into chunks.


Melt it in a bowl over boiling water. I find this works better than the microwave and it melts pretty quickly. We actually used two bars and one packet of Pop Rocks.


Spread it on on tin foil.


Sprinkle the Pop Rocks over the chocolate. I'm not sure why they look orange in the picture.


I put it in the refrigerator to cool it down faster. It was pretty thin and it didn't take long to harden.


Was it good? You betcha. It's awesome to let the chocolate melt on your tongue with the Pop Rocks doing their thing.

Next time I make it, though, I'm going to use a better quality chocolate, and maybe one that's dark. I think the combination of milk and white was a bit too bland for my taste. Not that it stopped me from eating almost the entire thing on my own.
